1 medium-head garlic 1 tbsp melted butter 1/4 cup (1/2 stick) butter, softened freshly ground pepper crusty French bread
Heat oven to 375 degrees. Trim off about 1/2 inch from top of garlic head to slightly expose cloves. Place on a piece of aluminum foil. Drizzle with melted butter and wrap around. Place in oven and roast until garlic is very tender, 35 to 40 minutes. Let cool in foil for 10 minutes. Squeeze garlic from skins into bowl; mash with fork. Add softened butter and season with pepper. Serve with bread. Makes 1/4 cup.
