PINEAPPLE-RICE and HAM PACKETS Ann Jenna - Blackwood
3 cups cooked rice 1 can (20 oz) crushed pineapple, drained 1/4 cup firmly packed brown sugar 1/4 cup butter 1/4 cup diced green pepper 1 tbsp soy sauce 1 tsp prepared mustard 8 slices cooked ham (approximately 8 oz)
Combine rice with pineapple, brown sugar, butter, green pepper, soy sauce and mustard. Put a ham slice on each of 8 squares of heavy-duty aluminum foil. Spoon rice mixture onto ham. Wrap securely, sealing ends. Set packets on grill over hot coals until heated, about 15 minutes.
